Over-medium and over-well are also flipped, then cooked longer until the yolk starts to set or is completely set.

  1. Use a small nonstick pan to melt your butter or oil over medium heat. Crack an egg directly into the warm pan.
  2. Cook for about three minutes until the white is set. Stop here for a sunny side up egg.
  3. Flip your egg and cook for an additional 30 seconds. Stop here for an over-easy fried egg.
  4. Continue cooking for up to one minute until the yolk is slightly set. Stop here for an over-medium egg.
  5. For an over-hard egg, cook two or three minutes after flipping until the yolk is firm.

Start by preheating your oven to 325 degrees Fahrenheit. Wrap a small stack of tortillas in foil and warm it in your preheated oven. Cook a 16-ounce package of sausage on medium-high heat for about eight minutes. Be sure to break up the sausage into small pieces while it cooks. Once the sausage is cooked through, add grated potatoes, diced yellow pepper, diced onion, diced spinach leaves and quartered cherry tomatoes. Cook this mixture for another eight minutes. Add four slightly beaten eggs to the mixture and cook until the eggs are firm. Remove the skillet from the heat and take your warmed tortillas out of the oven. Start with your favorite pancake batter, whether that’s a mix or made from scratch. Add 1 cup of cheese and 4 tablespoons of cornmeal to the pancake batter. If the batter seems too thick, you can add a little water or milk. Use a large skillet or griddle to heat some butter on low heat, then drop in small scoops of batter to make your pancakes. Turn the heat up to a medium setting to cook your pancakes — remember to flip them so they cook evenly. Remove the pancakes from heat and transfer them to a plate. Cover them to keep them warm.

In another pan, cook chopped green chili pepper, red pepper, red onion and cubed ham in butter for six to eight minutes. Transfer the veggie mixture to a medium bowl. Start by preheating your oven to 350 degrees Fahrenheit, then line a large glass or nonstick dish with pork slices. Add enough chicken broth to cover the pork, then cover the dish with foil. Cook in the oven for one hour, then flip the pork slices and add ½ cup of broth. Recover and cook for another 45 minutes, or until you can shred the pork with two forks. Take the dish out of the oven and let the pork cool for about 10 minutes. Shred your pork finely and transfer it to a mixing bowl. Mix in your barbecue sauce. Drain the excess liquid from your baking dish, then add your shredded pork back to this dish. Place the dish of pork in the oven, but leave it uncovered. Let it cook for about 15 minutes, then remove from the oven and set aside.

Use a large skillet to melt butter over medium heat. Fry six eggs one at a time and transfer them to a plate. Place six rolls on a plate. Top each one with pork, a slice of cheese and a fried egg to form your sandwiches.

Use a colander to drain the water from your green beans and potatoes in the sink, then run some cold water over them to cool them down. Once they’re cool, add the potatoes and green beans to the bowl of tossed greens. Add halved cherry tomatoes, thinly-sliced sweet Vidalia onions, quartered hard-boiled eggs and croutons, then toss all of these ingredients together thoroughly. Set this bowl aside.

Use a separate bowl to make your salad dressing. Whisk together grated Parmesan and Romano cheese, olive oil, lemon juice, balsamic vinegar, spicy brown mustard, garlic cloves, black pepper and sea salt. Add a bit more olive oil and balsamic vinegar if the dressing is too thick. Pour your salad dressing onto the salad mixture and toss everything together. Serve immediately.

6. Egg and Cheese Stuffed Baked Potatoes

These egg and cheese stuffed baked potatoes add a special twist to traditional baked potatoes. Each one is hollowed out and filled to the top with savory eggs, bacon and cheese — a mixture that simply melts in your mouth. Start by preheating your oven to 425 degrees Fahrenheit and washing six medium potatoes. Wrap each potato in aluminum foil, then poke several holes in each one with a fork. Place the potatoes in your preheated oven and let them bake for 45 to 50 minutes.  While your potatoes are baking, cook four strips of bacon in a skillet using a medium heat setting. Once the bacon is crispy, transfer it to a paper towel-covered plate and set aside.

When your potatoes are finished baking, let them cool slightly and lower the oven temperature to 350 degrees. Cut a thin lengthwise layer off the top of each potato, then carefully scoop out most of the insides with a spoon. Be sure not to break the skin, leaving a layer of potato around the edges. You can set aside the potato you scooped out to use in another recipe.

Place the hollowed potatoes onto a baking sheet, then brush melted butter on the inside of each potato. Sprinkle in some black pepper and salt. Put a layer of cheese inside each potato, followed by a layer of bacon and green onion. At this point, the potatoes should be about three-quarters full. Crack an egg into each of your potatoes, then sprinkle more salt and pepper on top of each one. Bake the potatoes at 350 for 20 minutes until the egg whites are set and the yolks are somewhat runny. Add any desired toppings and enjoy immediately!
