Banana and Egg Pancakes with Sauder’s Eggs

Pancakes — we love to eat them, but we don’t always enjoy cooking them. They can be a finicky dish and can easily become too dark on the outside or undercooked on the inside. But, when you find a great recipe and master it, they’re a yummy breakfast treat.

For a wonderfully simple and easy version, check out our banana pancakes recipe! We’ve added a few extra ingredients to our version, but you can make these pancakes only with the bananas and eggs, too. We decided to add some peanut butter and cinnamon to give these pancakes a little more protein and a slightly sweeter taste.

Often, when we make pancake batter, we’ve got enough to make a ton of pancakes. Sometimes we want pancakes — but not a bunch of them! Another great thing about this recipe is that you can make as or as few pancakes as you’d like. You’ll never have leftover batter or too many pancakes when you use this recipe.

Breakfast is an important meal — it gives you the energy you need to get you through the day. Skipping this meal could leave you sluggish and unable to do your best. Even if you don’t have a lot of time in the morning to cook breakfast, these pancakes come together fast. You can also mix them up the night before to save more time.

You can make these pancakes before heading out to work or school or on the weekends, too. Cooking by yourself can be cathartic, but cooking with other people can be a lot of fun. Whip up these banana pancakes with your partner or your kids, and you’re sure to make a lot of amazing memories.

Even with so few ingredients, these banana pancakes are packed with protein. You’ll be energized all day to do everything you need — and feel great doing it.

Directions:

  1. Mash up the bananas in a medium bowl with a fork.
  2. Add the eggs and mix until well incorporated.
  3. Stir in the peanut butter and cinnamon.
  4. In a large skillet, melt the butter over medium heat.
  5. Divide the dough to make two pancakes and fry until set and lightly browned.
  6. Serve with maple syrup and a light dusting of confectioners sugar.
