  • 6 large organic eggs
  • ½ cup of skim or fat-free milk
  • 1 avocado, peeled and sliced
  • 6 oz. of smoked salmon, sliced
  • 2 tablespoons of butter
  • 3 tablespoons of half-and-half
  • 1 teaspoon of salt
  • ½ teaspoon of freshly ground black pepper
  • 4 slices of fresh Texas toast bread
  • 2 tablespoons of chives, chopped
  • 1 fresh lemon, sliced (optional)

Directions

  1. Add a tablespoon of butter to a microwave-safe dish or bowl and microwave for 10 to 15 seconds to soften. Add the milk to the melted butter and stir. In a medium mixing bowl, whisk the eggs with the butter and milk mixture. Stir rapidly until a foamy appearance forms. Set aside.
  2. Pit and peel the avocado. Dice the avocado up into smaller pieces and place in a small mixing bowl. Use a masher to crush the avocado into a creamy mixture. Add salt and pepper and continue to stir. For even more flavor, squeeze juice from a fresh lemon on top. Set aside.
  3. Add a tablespoon of butter to a medium skillet over medium heat. Carefully tilt the pan to cover the entire pan with an even layer of melted butter. Gently pour the egg mixture into the pan and cook for 2 to 3 minutes.
  4. Turn the heat down to medium-low and use a spatula to lift the edges of the egg toward the center. Continue to turn the eggs until liquid is no longer visible.
  5. Add the fresh slices of bread to a toaster. Scoop a spoonful of the avocado mixture onto each slice of toast. Add another spoonful of eggs on top of each avocado layer. Cover each piece of bread with a few slices of salmon and sprinkle chives on top for added visual appeal and flavor. Serve immediately.
