Directions:

1. Place water and sugar in a small, non-reactive pot. Stir together. Bring water-sugar mixture to a boil on the stovetop at high heat, stirring constantly to keep sugar from burning. Immediately remove the pot from heat when the mixture reaches a full boil. Cool the mixture for at least 45 minutes to 1 hour.

2. Put cubed mango, juice of fresh lime and egg whites in a food processor. Process the mixture until all ingredients are well-blended, scraping the sides of the food processor to ensure all mango is incorporated into “batter.”

3. In a medium-sized, non-reactive mixing bowl, mix the water-sugar syrup and mango batter. Add to an ice-cream maker and put it in the freezer as directed Or, simply place the bowl directly into the freezer if you don’t have an ice-cream maker.

4. Wait 1 hour. Remove sorbet from the ice-cream maker. Alternatively, remove the bowl of sorbet from the freezer and re-mix, creating a smooth, soft-serve consistency sorbet.

5. Serve refreshing summer mango sorbet immediately or return it to the freezer for later eating.

Hint: Mango sorbet may freeze solid if left in the freezer long enough. To soften the sorbet, transfer the bowl to a countertop and try to stir every 5-10 minutes to break down frozen particles. Serve when soft again.
