Strawberry & Cream Cheese Pound Cake Recipe

INGREDIENTS:

  • 3 sticks of butter, softened
  • 1 8-oz package of cream cheese, softened
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1 teaspoon butter flavor extract
  • 1 teaspoon vanilla extract
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1-pint strawberries, washed and sliced
  • 1/2 cup confectioners sugar, sifted, plus more if needed

A pound cake is a buttery, slightly heavier, denser type of cake compared to a sponge. Pound cakes can have different flavors and toppings, but they’re delicious just by themselves. Directions:

  1. Preheat your oven to 325°F.
  2. Once the butter and cream cheese have softened, put them in a bowl with the sugar and beat with a hand mixer until fluffy.
  3. Add the salt, butter flavor extract, and vanilla extract. Beat until evenly combined.
  4. Add the eggs in one at a time and beat until well incorporated.
  5. Stir the flour into the wet ingredients.
  6. Add the strawberries into the batter little by little, folding in each addition.
  7. Grease and flour a bundt cake pan. Spoon the batter evenly into the pan.
  8. Bake the pound cake for one hour and 15 minutes. You’ll know the cake is done when a knife poked into the middle comes out clean and the cake shrinks away from the sides of the pan.
  9. Remove the cake from the bundt pan. Take a wire rack and place it over the top of the pan. Slowly flip the pan upside down and gently lift the pan off of the cake. Allow it to cool completely.
  10. Before serving, sift confectioners sugar onto the top of the cake.
