Spicy Chickpea and Lemon Soup Recipe

INGREDIENTS:

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped into small pieces
  • 2 stalks of celery, chopped into small pieces
  • 4 medium carrots, peeled and chopped
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 1 5-oz package of spinach
  • 1 15-oz can crushed tomatoes
  • 7 cups vegetable stock
  • 1 15-oz can chickpeas, drained
  • 1 1/2 cup green lentils
  • 1 teaspoon black pepper
  • 2 tablespoons unbleached flour
  • 1 egg
  • 2 cups water
  • The juice of two lemons

Directions:

  1. Heat up the oil in a large pot over medium heat. Saute the chopped onions, celery and carrots until they’re tender, about eight to 10 minutes. Add the turmeric, cumin, chili flakes, salt, garlic powder, 1/2 cup parsley, and 1/2 cup cilantro. Stir until the spices are well incorporated.
  2. Add the crushed tomatoes and vegetable stock and bring it to a boil.
  3. Add the green lentils and chickpeas.
  4. Lower the heat slightly and allow to simmer until the chickpeas and lentils are tender.
  5. While the soup is simmering, whisk the flour, egg, water, and lemon juice. Stir the mixture into the soup.
  6. Add the spinach.
  7. Let the soup simmer for five minutes.
  8. Serve among bowls.
  9. Top each serving with the remaining parsley and cilantro.
