  • 1 diced onion
  • 2 diced green onions
  • 2 diced tomatoes
  • 2 diced Roma tomatoes
  • ⅓ cup cilantro
  • ½ teaspoon chili powder
  • ½ teaspoon granulated sugar
  • Cooking spray
  • 1 tablespoon olive oil
  • 4 eggs
  • Four 6-inch tortillas
  • ½ cup shredded lettuce

Place the rolls on a baking tray and let them sit for about 30 minutes or until they slightly rise. Bake at 350 degrees Fahrenheit for 22-24 minutes and top with the remaining filling.

16. Baked Eggs With Beans

  • 4 eggs
  • 2 chopped red onions
  • ½ chopped green pepper
