Chicken Pot Pie

Chicken pot pie is the ultimate comfort food on chilly evenings. This recipe includes hearty chicken, healthy vegetables, and hard-boiled eggs in a creamy broth and covered with a flaky crust.

To make chicken pot pie, melt ⅓ cup of butter in a large saucepan. Add ½ cup of chopped carrots and ½ cup of chopped celery to the saucepan and cook over medium-high heat until the vegetables soften. Add ⅓ cup of flour to the saucepan and cook for one minute, stirring continuously.

Slowly add 2 ¾ cups of chicken broth and reduce to medium heat. Cook and stir until the mixture thickens and starts to bubble. Add 4 cups of cooked chicken, ½ cup of peas, four chopped hard-boiled eggs, and a pinch of salt and pepper. Scoop the mixture into your pie crust and bake at 400 degrees Fahrenheit for approximately 35 to 40 minutes.

Chicken and Dumplings

Chicken and dumplings make a great meal to share as a family. Share this warm, hearty meal on a cozy night.

In a medium bowl, combine 2 tablespoons of vegetable oil, one egg, 3 tablespoons of water, and ½ teaspoon of salt. Whisk this mixture together and add 1 cup of flour before covering and refrigerating the dough overnight or for at least two hours. Afterward, roll the dough out on a floured surface and cut it into medium-sized rectangles.

Combine 8 cups of chicken broth, 3 ½ cups of water, ½ cup of chopped celery, and ½ cup of chopped onion in a large saucepan. Cook to boiling and reduce heat to simmer for five to 10 minutes or until vegetables soften. Add the dough rectangles to the saucepan and return the liquid to a boil. Cook for approximately three to five minutes or until dough is cooked.

Add 3 to 4 cups of cooked chicken, ¼ cup of heavy cream and 2 tablespoons of butter to the saucepan and simmer for approximately two to three minutes. Remove the pan from the heat and let the mixture stand for 10 to 15 minutes before serving.

Broccoli Cheese Soup With Cheesy Egg Croutons

Broccoli is a healthy vegetable that can boost the immune system, and no one can resist it when it’s mixed in a creamy cheddar cheese soup.

To make this soup recipe, combine two cans of cream of broccoli soup, two cans of cream of celery soup, 3 cups of half and half, 10 to 12 ounces of frozen broccoli florets, and one jar of cheddar cheese dip in a slow cooker. Cook on low for six hours, or cook on high for one hour and low for two to three hours.

To make the croutons, you will need to combine ¼ cup of softened whipped cream cheese, two peeled and diced hard-boiled eggs, and four strips of crumbled bacon together. Toast four bread slices and cut them diagonally. Top each bread slice with the cheese and egg mixture.

Chicken Noodle Egg Drop Soup

To make this recipe, place a whole chicken, half a chopped onion, three chopped celery stalks, four chopped carrots, and two bay leaves in a large stockpot. Cover with water and add salt and pepper to taste. Bring this to a boil and then cover and let simmer for about two to three hours.

Scoop the vegetables and pull the meat from the chicken and set it aside. Use a strainer and a large bowl to strain the chicken stock, and then return the chicken stock, vegetables, and chicken to the stockpot. Add your desired amount of egg noodles and cook for about 15 minutes over medium heat or until the noodles are soft.

Gently beat one to two eggs in a measuring cup or small bowl. Ladle some hot soup into serving bowls and immediately pour the egg into the soup before slowly stirring it.

Pasta Carbonara

Pasta carbonara combines bacon with spaghetti noodles, olive oil, garlic, cheese, and eggs for a flavorful pasta dish.

In a large skillet, heat 1  tablespoon of olive oil over medium heat and cook 1 teaspoon of minced garlic with about ½ pound of diced thick-cut bacon until it is crispy. Beat three or four eggs and ½ cup of grated Asiago cheese in a small bowl. Cook your pasta according to the package instructions and use tongs to combine it with the bacon in the skillet.

While the pasta is slightly cooled but still fairly hot, mix the eggs with the pasta and bacon and toss everything to combine it quickly. Add some of the remaining pasta water from the pot to keep the pasta moist. Add ½ cup of Asiago cheese and a dash of salt and pepper before serving.

Beef Pot Roast Hash

Beef pot roast is an excellent winter meal that’s even better mixed with potatoes and scrambled eggs. Prepare this dish for breakfast on a cold morning or serve it for dinner.

This recipe is delicious and easy to make. In a slow cooker, combine a boneless beef roast, one chopped onion, 1 cup of beef broth, 1 cup of water and 1 tablespoon of Worcestershire sauce and cook on low for six to eight hours. Once the meat is cooked, shred it and set it aside.

Cook five or six diced red potatoes in a large skillet, and use a slotted spoon to move the vegetables from the slow cooker into the skillet with the potatoes. Add beef and stir. Scramble 10 eggs and cook them in a skillet over medium-high heat, and then mix them with the beef, potatoes, and vegetables.

Butternut Squash Soup

Butternut squash soup is a great way to use the popular winter vegetable. Delicious poached eggs and cheddar cheese make this meal even more delectable.

To make this dish, peel one butternut squash, cut it in half and roast it in the oven for 30 minutes at 350 degrees Fahrenheit. Dice the squash, set a quarter of it aside and fry the rest of it in a large skillet for four to five minutes with some olive oil, three chopped carrots, 1 tablespoon of minced garlic, and two sage leaves.

Pour 4 ½ cups of vegetable stock into the skillet and simmer for 10 minutes or until the vegetables soften. Blend this mixture in a food processor and then strain it into a saucepan. Poach five egg yolks in simmering water and then remove them and set them aside.

To serve this dish, place an egg yolk in each serving bowl and shred your desired amount of cheddar cheese on top. Place the remaining roasted squash around each egg yolk and pour the soup around it.

Shepherd’s Pie

Shepherd’s pie is a hearty meal that’s sure to warm you up on a winter day. Adding egg yolks to the mashed potato topping gives it a beautiful golden-brown crust.

To make this recipe, boil six or seven russet potatoes for about 15 minutes or until the potatoes soften. Drain, add one stick of butter and mash the potatoes before setting them aside. Cook the lamb in a large pot with 1 tablespoon of olive oil until browned and drain it before returning it to the pot. Add ½ cup of white wine and cook over medium heat until the liquid is reduced by half.

Add three sliced carrots, half a diced onion, and two chopped celery stalks to the pot and continue cooking until the vegetables are soft but slightly crunchy. Add ½ cup of lamb stock and cook until the lamb absorbs it. Add a pinch of salt and pepper to taste as well as 2 tablespoons of ketchup and 2 tablespoons of Worcestershire sauce.

Add three egg yolks to the mashed potatoes and then use a piping bag to pipe the potatoes on top of the shepherd’s pie. Bake in the oven at 400 degrees Fahrenheit for about 30 minutes or until it turns brown and starts to bubble.

French Onion Soup

French onion soup is a warm, savory dish topped with cheese. This recipe is even more delicious with poached eggs in the bottom.

To make this recipe, melt 1 tablespoon of butter in a large pot and sauté 2 pounds of thinly sliced onions, 1 tablespoon of water, a dash of red pepper flakes, 1 teaspoon of sugar, and a pinch of pepper over medium heat. Stir 1 tablespoon of flour into the pot and continue cooking for one minute.

Next, add 1 tablespoon of beef broth and 4 ½ cups of water to the pot. Cook over medium-high heat until boiling and then reduce heat and simmer uncovered for 30 minutes.

For the next step, you will need six oven-safe serving bowls. Spray the bowls with cooking spray and crack an egg into the center of each oven-safe bowl. Ladle the soup mixture around the eggs so each yolk remains exposed and sprinkle your desired amount of shredded Gruyere cheese around the yolks. Place the bowls on a baking sheet and bake at 450 degrees Fahrenheit or until the egg yolks are solid.

Creamy Sausage Gnocchi

Sausage gnocchi in a delectable creamy sauce is sure to lift your spirits on a cold, dreary day.

To make this recipe, sauté 8 ounces of ground sausage, and half of a finely chopped onion in a large skillet for about 10 minutes or until the sausage is lightly browned. Add ½ teaspoon of garlic powder and cook for 30 seconds before adding a ⅓ cup of white wine and cook for another minute.

Add one can of diced tomatoes, 1 pound of uncooked gnocchi, and 1 cup of heavy cream to the skillet and stir. Reduce the heat to medium and cover after the mixture starts to bubble and cook for an additional five minutes. To thicken the sauce, add an egg yolk to the mixture and slowly stir. Sprinkle ½ cup of Asiago cheese into the pan before serving.

Classic Macaroni and Cheese

Classic macaroni and cheese is the ultimate comfort food, and it’s the perfect family meal to share after a day of playing in the snow.

To make this recipe, cook 2 cups of fusilli pasta in a large pot of boiling water until it’s tender. You can also use classic elbow macaroni, but the fusilli pasta’s grooves will hold more sauce and make this dish even more delicious.

Drain the pasta and combine it with 1 cup of shredded colby jack cheese, 1 cup of shredded extra-sharp white cheddar cheese, 2 cups of milk, and two beaten eggs. Add salt and pepper to taste and transfer the mixture to a greased 9-by-13 inch baking dish. Bake at 350 degrees Fahrenheit for 30 minutes.

Glazed Meatballs

Meatballs glazed with honey and garlic are sweet and zesty. Serve them over rice or pasta for a mouthwatering meal.

To make this dish, combine two large eggs and ¾ cup of milk in a bowl with 1 cup of bread crumbs, 1 teaspoon of salt and 1 teaspoon of onion powder. Crumble 2 pounds of ground beef and stir it into the mixture.

Roll the mixture into 1-inch meatballs and bake them uncovered at 400 degrees Fahrenheit for about 15 minutes or until the meat is cooked through. They bake best on greased racks in shallow baking pans.

Sauté 3 teaspoons of garlic powder, 1 tablespoon of butter, ½ cup of ketchup, 4 tablespoons of soy sauce, 1 teaspoon of Worcestershire sauce, and ½ cup of honey in a skillet until it starts to boil. Reduce the heat, cover and simmer for about five minutes. Drain the meatballs and add them to the sauce to evenly coat them.

Lasagna

Lasagna is a warm meal perfect for those cold days when you’re craving Italian food.

To make this recipe, cook 1 pound of sweet Italian sausage, ¾ pound of ground beef and ½ cup of minced onion in a skillet over medium heat until the meat is browned. Add ½ cup of water, one can of crushed tomatoes, two cans of tomato paste, two cans of tomato sauce, and 2 teaspoons of Italian seasoning to the skillet and stir. Cover and simmer for about one and a half hours and stir occasionally.

Boil lasagna noodles for eight to 10 minutes, drain them and rinse with cold water. Combine one egg, ½ teaspoon of salt, and 16 ounces of ricotta cheese in a bowl and set aside. Spread an even layer of meat sauce in a baking dish followed by six noodles and a layer of the cheese mixture. Repeat these layers until you use all of the meat, cheese, and pasta.

Top the lasagna with ½ cup of mozzarella cheese and ½ cup of Parmesan cheese. Spray some foil with cooking spray and cover the baking dish. Bake the covered dish at 375 degrees Fahrenheit for 25 minutes, and then cook it uncovered for another 25 minutes.

Chorizo Breakfast Quesadillas

Chorizo breakfast quesadillas are perfect for cold mornings when you’re in the mood for some spicy Mexican food.

To make this recipe, cook 12 ounces of chorizo in a large skillet. Push it to the side of the pan after browning and add one can of diced potatoes, one can of diced tomatoes, and one diced green pepper. Cook the vegetables until they are soft and move them to a plate with the chorizo. Cook 2 cups of egg whites over medium heat and mix them with the meat and vegetables in a large bowl.

Place flour tortillas in the skillet and sprinkle your desired amount of shredded Mexican cheese. Add about ½ cup of the meat and vegetable mixture to one side of each tortilla and fold them closed. Cook the tortillas over medium heat until they are golden brown.

Breakfast for Dinner: Breakfast Burritos

Warm breakfast burritos can be the perfect dinner on a winter night. This easy recipe can even be made ahead of time and saved for a day when you need a fast, pre-prepared meal.

To make this delicious breakfast burrito recipe, place tortillas in the oven at 325 degrees Fahrenheit to warm and cook one package of lean turkey sausage in a skillet over medium-high heat. Add potatoes, onion, bell pepper, and spinach to the cooked sausage and continue to cook for about eight minutes. Add gently beaten eggs to the mixture and cook them until they are firm. Remove the skillet from the heat and set it aside.

Fill the center of your tortillas with 2 to 3 tablespoons of the potato, sausage, and egg mixture and sprinkle some shredded cheese on top. You can also add some Picante sauce if you’d like to. You can eat the burritos as soon as they are finished, or you can wrap them in plastic wrap and foil to freeze for a later day.
